Weekly Review – September 9

This will be the first installment in, what I hope to make, a weekly post.  I wanted to have a place, that does not require a social media post, to share a little bit longer version of the week.  Not that my life is so interesting but I do find cool stuff I want you to know about from time to time.  I just want to make this place as helpful for others as possible.  We will try this and see how it goes…

You can tell by a few posts this week that I am knee deep in green chiles.  I got about 22 bags frozen from about 40 pounds of chiles.  I posted a few recipes for you guys… Chile Relleno Casserole and a Leftover Casserole.  I also put up a recipe for my Autumn Breakfast Hash which you could also add green chiles to if you are so inclined.  I would love to hear what you think if you try them.

Next week is all about the apples… I have two large paper bags full of apples to start processing.  I am planning on doing some canning so stay tuned.  I am also planning on processing some Salsa Verde with some of those chiles.

 

A few recipes from other green chile enthusiasts I tried…

Homesick Texan has two recipes from her website that I used this week – Green Chili Corn Pudding and Squash and Green Chili Casserole.  Both recipes were a huge hit with the family.  Here are my personal results for each.  I got to use my cast iron over-sized skillet for the casserole.  I love using my cast iron!

They may look similar in the pans but they had very different taste results.  I will definitely keep them in my “What to make with all these green chiles” file.  LOL

There is no need to reinvent the wheel, right?!  I love testing out new recipes even when they are not my own, like the ones above.  There are some great chefs, cooks and bakers out there and we should share and encourage one another in my opinion.  I have no qualms about sharing other people’s links and websites to delicious eats.
